A food intolerance is a genetic enzyme deficiency that prevents you from digesting certain foods. We all have foods that we are intolerant to which we inherited from our ancestors. Yes, that’s right. We ALL have food intolerances.
Some intolerances are even foods that we consider to be good for us. For example, some people are intolerant to fruit! Yes, that organic apple you ate for breakfast might be causing more harm than good. Or that sweet potato you ate last night. That might be good for your partner but not good for you.

Food intolerances are NOT like food sensitivities or allergies.
Allergy and sensitivity tests determine which foods or substances are triggering the immune system at a particular moment in time.
Our food intolerance evaluation determines your inborn, genetic predisposition to digest particular foods or food groups. These results appear to be lifelong. Your food intolerance is typically unchanging and needs to be determined only once.
Foods that do not digest well ferment and putrefy in the intestines. These processes are driven usually by less-than-optimal bacteria, and result in the generation of many toxic metabolites. These toxins are absorbed into the blood. They circulate along with nutrients, through the portal circulation into the liver, where they are conjugated by the liver, to the extent that the liver can do this.
The greater the level of this “toxemia”, the more persistent will be the level of circulating toxins in the blood. This becomes the basis of chronic inflammatory reactions throughout the body, depending upon where there are stressed tissues, genetic weakness, other pathology or trauma, etc.
This creates chronic digestive issues in two ways.
1. First, the dysbiotic activity causes local inflammatory activity in the intestine of the susceptible person.
2. This is complicated and exaggerated by the presence of inflammatory toxins in the blood, which circulates through the intestinal vasculature where it irritates these tissues, rather than simply nourish and help repair these tissues. The toxic load here adds to the inflammatory potential.
The identification and amelioration of the cause of these processes will contribute substantially to the amelioration of the inflammation. It is on this basis that we seek to determine the dietary source of the mal-digestive dysbiosis as a fundamental method to reduce the inflammatory potential within the body. This reduces much of the basis of the disease.

Life-Changing. Dr. Otis G. Carroll is considered one of the most significant naturopathic physicians of this century. He practiced from 1917 - 1962, in Spokane, Washington. Food intolerance evaluation as devised by Dr. Carroll is similar in some respects to the bioelectronic testing of Voll, from which many biofeedback mechanisms currently in use have evolved.
In the testing, a blood sample is placed in a specific electric circuit, and exposed to various foods in contact with a reagent. Fluctuations in the current are detected, and thereby the outcome of the testing determined.
The Food Intolerance Evaluation is not an allergy or sensitivity test. Currently, we are aware of several different kinds of reactivity to foods.
Intolerance has to do with digestion and metabolism, and is an enzymatic phenomenon, genetically determined. Food intolerance means that a particular body does not digest or metabolize a particular food well. As a consequence, maldigestion occurs, and toxic metabolites are formed in the intestine and absorbed into the blood. These will affect or interfere with normal function of the body, and become part of the basis of chronic illness.
Allergy is different. It is an immune system reaction in which food is perceived as if it were a foreign protein and the body inappropriately reacts, creating symptoms. Allergy is often the result of an underlying intolerance.
There are other, less well defined reactions, which can occur to food in a body, which are generally referred to as food sensitivities. In our experience, food intolerances often lead to allergies and sensitivities by creating toxicity and inflammation in the gut, where most of the immune system resides.
1. Everybody has a food intolerance.
Food intolerances are inherited from our ancestors. This evaluation has been run on hundreds of thousands of people and everybody has one.
2. A food intolerance does not change unlike an allergy or sensitivity.
The food intolerance evaluation assesses foods that the body cannot digest and assimilate properly. This is not an immune system response.
3. Food intolerances are the primary cause of inflammation and toxicity in the body.
Foods that cannot be digested properly ferment, putrefy, and go rancid in the digestive tract, causing malabsorption, dysbiosis, and systemic inflammation and toxemia. Food intolerances are often the root cause of allergies and sensitivities because they aggravate the immune system.
4. You are most likely consuming your food intolerance everyday.
The food and supplement industry is so contaminated with food additives that food intolerances are hidden in many places. And most mainstream diet models do not eliminate the most common food intolerances.
5. Eliminating your food intolerance is one of the most important things you can do for your health.
What we see in our practice over and over is that when the body can finally digest and eliminate properly, health improves, often dramatically.
